Feeds six.
Set oven to 200c.
Chop 2 large onions and 2 cloves garlic.
Pop these into a large pan with a splash of oil and cook for a couple of minutes.
Add a bag of frozen veggy mince and stir in two cartons of chopped tomatoes and a handful of dried herbs.
Simmer for five minutes before whizzing with a hand blender.
Then melt a knob of solid veg fat in a second pan and mix in a generous shake of plain flour.
Add milk, stirring all the while, and adding more milk as this thickens.
When you have a good amount of white sauce, remove from the heat, stir through a teaspoon of salt and add two large handfuls of grated cheese.
Now, alternating with the 'meat' sauce and the cheese sauce, make layers using dried lasagne sheets.
Finish with a layer of the cheese sauce.
Pop into the oven for half an hour.
Eat in delicious silence.
Do you ever miss meat, or did you stop eating it because it wasn't agreeing with you. Do you cook with something that has the same texture of meat, and if so what is it? Do you feel better not eating meat? I guess I am always curious about how vegetarians became meat free.
ReplyDeleteHi Tana, I was veggy for about 10 years, then ate some meat but only careful choices made, then we both went vegan for five years. We started eating meat again when I became ill as I needed to know if anything in my diet would or could help me to recover. It made no difference at all. Now we are what we term 'intelligent eaters' in that we make careful choices about our food intake. We choose vegan for the majority of our meals, add in cheese a couple of times a week, and eat meat and fish perhaps once a fortnight. This keeps our costs down as well as our health up. The mince in the above recipe is shops own version of frozen veggy mince. I pick it up when it is on offer for £1 a bag, and use half a bag in a recipe like this. xx
DeleteSounds easy and tasty, and you've published this recipe just in time. Tesco and Aldi have just removed lots of lasagnes from their shelves due to contamination problems.
ReplyDeleteWhy buy a substandard ready prepared one when you have just shown how easy, and cheaply it is possible to do it all yourself from scatch.
